Pear and blue cheese tortilla pizza
Topped with crunchy walnuts and fresh rocket.
Preparation time : 10 min Cooking time : 5 min Servings : 2Preheat the oven to 200°C. Brush the tortilla's with olive oil.
- 1 packet of Mexican flour tortilla's
- olive oil - for brushing
- 1 handful shaved pecorino or Parmesan
- 1 packet Coppa (cured pork)
- 1 handful walnuts
- 1 handful fresh rocket
Grate a light dusting of pecorino or Parmesan over the base. Scatter small chunks of blue cheese fairly liberally over and arrange a few very thin slices of pear around.
Tear up 2 slices of coppa ham place on top of the cheese.
Bake for 4 – 5 minutes until the edges are just starting to brown and all the cheese has melted.
Sprinkle over chopped walnuts and fresh rocket.
