Savoy cabbage, red pepper and cumin soup
A quick and easy low carb soup.
Cooking time : 30 min Servings : 2Heat oil in large, heavy-based pot. Fry onion & cumin seeds until golden brown before adding garlic and frying for a further 2-3 minutes.
- 2 Tbs olive oil
- 1 red onion, chopped
- 1 cloves garlic, crushed
- 1 tsp cumin seeds
- 1 savoy cabbage, shredded
- 1 red pepper, diced
- 1/2 c soaked almonds
- 800 ml vegetable stock
Add the cabbage, pepper and almonds, and cook in stock for 15 minutes (keeping some cabbage for later).
Allow to cool before blending to smooth consistency and season to taste. Fry remaining cabbage and place on paper towel to soak oil. Use for garnish.
