WATCH: Cheesy butternut crumble
- 1 medium butternut - peeled and sliced into discs
- 1 cup grated Parmesan cheese
- 500 ml cream
- 150 g butter - cut into cubes
- 150 g flour
- 2 sprigs fresh thyme leaves
- salt and pepper to taste
Preheat the oven to 180°C and grease a large, deep oven proof baking dish.
Place the butternut slices into the baking dish in layers. Sprinkle over the Parmesan cheese and then pour over the cream.
In a large bowl, combine the butter with the flour and work with your hands until coarse. Add the thyme, then salt and pepper.
Sprinkle the flour mixture over the butternut and bake in the oven until golden and bubbling.
