  • BASE:
  • 225 g butter
  • 1/3 cup sugar
  • 2 cup flour
  • 3 tsp fresh thyme
  • 1 tsp salt
  • 2/3 cup lemon juice
  • 4 eggs
  • 1/4 cup flour

Once cooked through and lightly browned, remove and allow to cool.

In another bowl, combine the eggs, sugar and lemon juice for the filling. Pour the mixture over the shortbread base and place in the oven again to bake for 45 mins. Reduce the temperature to 150° C. Remove from the oven and allow to cool before placing in the fridge for 1 hour.
