Nothing beats the smoky taste of food cooked over an open fire but if you can’t braai, these griddlecakes comes a close second.

Ingredients (6)

125 ml flour — bread
250 g boerewors
100 g cheddar cheese — grated
80 m ml jam — smooth, apricot
15 ml fresh thyme — chopped
500 g prepared bread dough — at room temperature

Method:

Preheat the oven to 200 °C. Line two baking sheets with aluminium foil.

1.     Divide the dough into 4-6 pieces and shape into balls. Sprinkle half the flour on one of the baking sheets and arrange the balls on the sheet. Dust with the remaining flour and bake for 20-25 minutes or until done.

2.     Arrange the boerewors on the other baking sheet and cook in the oven for 15-20 minutes or longer, depending on the thickness of the sausage, until done.

3.    Herb jam: Mix the jam and thyme.

4.    To serve: Break the sausage into 4-6 pieces. Cut the griddlecakes in half and spread with the herb jam. Put a piece of sausage in each griddlecake and sprinkle the cheese over.
