Delicious breakfast lollies

These are perfect for a grab-and go start to a summer day – a quick, healthy and delicious alternative to a traditional breakfast.

Ingredients
  • 500 ml plain yoghurt
  • 15-30 ml honey
  • 1 pawpaw, peeled, deseeded and diced
  • 2 kiwi fruits, peeled and thinly sliced
  • 2 bananas, peeled and sliced
  • 250 ml muesli or granola
  • 30 ml coconut shavings
  • 100 g raw almonds
  • Keep 6-8 ice lolly moulds and ice cream sticks on hand.
Method

1 YOGHURT

Flavour the yoghurt with honey to taste.

2 FRUIT

Put the pawpaw in the bottom of 6-8 ice lolly moulds. Line the sides of the moulds with the kiwi and banana slices and fill each mould ¾ of the way with yoghurt mixture.

3 TO FINISH

Sprinkle the muesli or granola, coconut shavings and raw almonds on top of the yoghurt and freeze the lollies for 2 hours. Insert an ice cream stick in each and freeze overnight
