Banana split with passion fruit and granola

Try new ways of enjoying a fruit salad. To prevent the banana from getting soft, put the oven tray closer to the grill so that the fruit can caramelise faster.

  • 4 bananas, peeled and halved
  • 60 ml caster sugar
  • ice cream or frozen yoghurt granola, to serve
  • 250 ml passion fruit pulp
  • 80 ml caster sugar
  • 125 ml grape juice

Preheat the oven grill.

1 Put the bananas on a metal tray and sprinkle the caster sugar over. Put under a hot grill to caramelise the top of the bananas until golden.

2 DRESSING Put all the ingredients in a pot over medium heat and simmer until the sugar dissolves. Set aside until it thickens.

3 Divide the bananas between plates and top with scoops of ice cream or frozen yoghurt. Drizzle the dressing over and sprinkle the granola on top.

TIP For a zesty alternative, use orange preserve instead of passion fruit.
