Baked eggs with spinach and feta

An easy dish leaving you feeling happy and full.

  • 250 g spinach- cooked and drained
  • 30 ml freshly grated parmesan cheese
  • 12 large eggs
  • 60 ml cream
  • 100 ml crumbled feta cheese
  • salt and freshly ground black pepper
Set oven at 200°C.

Grease six ramekins with butter and then divide the spinach between them.

Sprinkle with Parmesan cheese. Break two eggs into each ramekin and cover with cream.

Top with feta. Season with salt and freshly ground black pepper.

Place ramekins onto a baking sheet and bake in preheated oven for 10 minutes or until puffed and golden brown.

Serve with wholewheat bread or toast.
