Char-grilled fish

  • 15 ml paprika
  • 10 ml dry mustard powder
  • 2 to 5ml cayenne pepper
  • 5 ml each ground cumin, black pepper, white pepper, salt and dried thyme
  • 4 hake steaks
  • 180 ml butter, melted
  • lemon wedges, to serve
Mix the spices together in a small bowl and set aside.

Dip each piece of fish into the melted butter and sprinkle both sides with the spice mixture. Gently pat the spices onto the fish.
Place the fillets into a very hot pan and drizzle each piece with a little butter. Cook for approximately three minutes, or until the fish has a charred appearance.
Turn the fish over and drizzle with butter again. Cook for another 2 to 3 minutes. Serve with potato wedges and fresh lemon.
