Sweet chilli pork and noodles
Preparation time : 10 min Cooking time : 20 min Servings : 4Place the pork in a bowl and season well.
- 600 g pork fillet, sliced
- Oil, for frying
- 2 garlic cloves
- 5 cm piece of ginger, peeled & grated
- 1/2 cup store-bought sweet chilli sauce
- 5 g fresh mint leaves
- 200 g rice noodles
- 5 g fresh mint
- 5 g coriander leaves
- Sesame oil, for drizzling
Heat oil in a pan, add pork. Sauté until golden brown. Remove, set aside.
Place garlic and ginger in the pan, sauté until golden. Add sweet chilli sauce and ¼ cup water, return the pork to pan, cook for 5 minutes or until cooked through. Remove from heat. Toss in mint and set aside.
For the noodles:
Place noodles in a bowl, cover with hot water for 5 minutes, drain. Toss through with mint and coriander; drizzle with sesame oil.
Serve the sliced pork on a bed of noodles.
