Pear and blue cheese tortilla pizza

Topped with crunchy walnuts and fresh rocket.

  • 1 packet of Mexican flour tortilla's
  • olive oil - for brushing
  • 1 handful shaved pecorino or Parmesan
  • 1 packet Coppa (cured pork)
  • 1 handful walnuts
  • 1 handful fresh rocket
Preheat the oven to 200°C. Brush the tortilla's with olive oil.

Grate a light dusting of pecorino or Parmesan over the base. Scatter small chunks of blue cheese fairly liberally over and arrange a few very thin slices of pear around.

Tear up 2 slices of coppa ham place on top of the cheese.

Bake for 4 – 5 minutes until the edges are just starting to brown and all the cheese has melted.

Sprinkle over chopped walnuts and fresh rocket.
