Phyllo pastry pizza with butternut and blue cheese

This base requires almost no effort.

Ingredients
  • 500 g butternut cubes
  • 1 red onion, sliced
  • salt
  • olive oil
  • 230 g smooth cottage cheese, sweet chilli flavour
  • 100 g blue cheese
  • sage leaves
  • olive oil spray OR butter
  • 4 sheets phyllo pastry, defrosted
Method

Preheat the oven to 190°C.

Line a baking sheet with tinfoil and grease with non-stickspray.

1 TOPPING

Arrange the butternut cubes and onion slices in a single layer on the baking sheet,sprinkle salt and olive oil over and roast in the oven for 30-40 minutes until the butternut is tender.

2 CRUSTS

Spray olive oil or spread butter on each phyllo sheet. Put the layers on top of one another ands lice in half, then put on the prepared baking sheet.

3 Dollop cottage cheese on each of the phyllo crusts, then add the butternut and onion. Crumble the blue cheese over and add the sage.

4 Bake for 10 minutes or until the blue cheese has melted and the crust is crispy.Slice and serve immediately.
