Meatballs with baby marrow noodles

Preparation time : 15 min Cooking time : 15-20 min Servings : 4
  • 500 g lean beef mince
  • 1 red onion, grated
  • 10 g fresh parsley,chopped
  • 125 ml sunflower seeds
  • 1 egg, whisked
  • 1 Weet-Bix bar, finely crumbled
  • salt and pepper
  • 15 ml olive oil
  • 2 garlic cloves, chopped
  • 500 g baby marrow noodles
  • salt and pepper

Preheat the oven to 200 °C. Line a baking sheet with foil and grease with nonstick spray.

1 Meatballs Mix the mince, onion, parsley,sunflower seeds, egg and  Weet-Bix bar well. Season with salt and pepper.

2 Roll the mince mixture into walnutsize balls. Arrange on a platter, cover and chill for at least 15 minutes.

3 Transfer to the prepared baking sheet and bake for 15 minutes or until  done.

4 Baby marrow noodles Heat the oil in a pan and fry the garlic until fragrant. Add the noodles and stir-fry for a minute. Remove from the heat and     season with salt and pepper.

5 Serve the meatballs on the noodles with plain full-cream yoghurt* and charred pita breads.
