Sweet pap with stewed fruit

  • mixed dried fruit
  • 500 ml strong rooibos tea
  • 1 cinnamon stick
  • 30 ml honey
  • squeeze of lemon juice
  • PAP
  • 375 ml mealie meal
  • 2,5 ml salt
  • 30 ml butter
  • 60 ml amasi
  • 125 ml amasi
  • 30 ml dark brown sugar

1. Stewed fruit: Put the dried fruit in a glass bowl and cover with the rooibos tea. Leave overnight to soak and rehydrate.

2. Put the fruit, cinnamon, honey and lemon juice in a saucepan or pot and simmer over medium heat for 15-20 minutes or until the fruit is soft.

3. Pap: Use the mealie meal and salt to make the pap according to packet instructions. Stir in the butter and amasi.

4. To serve: Spoon the pap into individual bowls and put the stewed fruit on top. Pour a little amasi over each and sprinkle brown sugar on top. Serve hot.
