Pasta salad with roasted brinjal and blue cheese

You can use pasta shells instead of orzo in this recipe.

Ingredients
  • 400 g brinjal flesh, diced
  • 30 ml dried oregano
  • a pinch of chilli flakes
  • 60 ml olive oil
  • salt and pepper
  • 250 g orzo (rice-shaped) pasta, cooked, rinsed and cooled
  • 100 g blue cheese, crumbled
  • 50 g Parmesan cheese, finely grated
  • 60 ml olive oil
  • 30 g fresh basil, torn
  • 100 g cherry tomatoes, quartered
  • juice of 1 lemon
Method

Preheat the oven to 180°C.

1 On a baking sheet, toss together the brinjal, oregano, chilli flakes and olive oil. Season with salt and pepper then roast in the oven for 30 minutes or until the brinjal is tender.

2 In a bowl, toss together the pasta, roasted brinjal, blue cheese, Parmesan, olive oil, basil, tomatoes and lemon juice and serve.
