Ingredients (16)

1 chicken — cut into portions
limes
5 ml coriander — ground
5 ml cumin — ground
45 ml sunflower oil
2 onion — chopped
4 garlic — cloves, crushed
2,5 cm fresh ginger — grated
5 ml garam masala
45 ml fresh mint — chopped
45 ml fresh coriander — chopped
sea salt and freshly ground black pepper
saffron — optional
125 ml cream
15 ml ghee — or butter
lime — cut into wedges

Method:

Place chicken in a heavy based saucepan.

Pour lime juice over chicken and allow it to marinate.

Add ground spices and set aside for 10 minutes.

Heat oil and sauté onions, garlic and ginger until transparent.

Add garam masala, mint, coriander, salt and freshly ground black pepper.

Spread the mixture evenly over the chicken.

Pour in cream and ghee.

Cover and cook over medium heat until the chicken is tender.

No water is to be added.
