Chicken with tomato, dates and olives

For an easy pasta dish, chop fresh cherry tomatoes into some of the basic tomato purée and heat in a pan. Mix with cooked spaghetti and sprinkle Parmesan cheese over.

Ingredients (11)

chicken thighs and drumsticks
salt and freshly ground black pepper
250 g dates
whole garlic bulb — halved horizonally
500 ml tomato purée
fresh coriander — handful, chopped
125 ml wine — white
green olives
30 ml capers
fresh coriander
cooked herb couscous or other starch (optional)

Method:

Preheat the oven to 180ºC.

1 Season the chicken with salt and pepper and arrange in an ovenproof dish. Add the dates and garlic.

2 Mix the tomato purée with the coriander and wine and pour over the chicken. Bake for about 30 minutes or until done, then add the olives and bake for another 15 minutes or until browned and fragrant.

3 TO SERVE

Sprinkle the capers (if using) and coriander over. Serve hot with the couscous or starch of your choice (if using).
