Chocolate date cake

dates
150 g dates — chopped
Bicarbonate of soda
125 ml coffee
CAKE
160 ml flour — stoneground white bread
90 ml cocoa powder
3 ml Bicarbonate of soda
3 ml Baking powder
5 ml salt
60 ml fresh chillies — 573
125 ml yoghurt — plain
2 eggs
5 ml vanilla — essence
750 ml courgettes — grated
125 ml salted almonds — chopped
2 dark chocolate — preferably 80% cocoa, sugar-free, broken into pieces
TOPPING
cocoa powder
125 g cottage cheese — creamed
125 ml double cream plain yoghurt
10 ml sugar
frozen berries

Method:

Preheat
the oven to 170°C. Grease a medium loaf tin with non-stick spray.

1. Dates: Put
the dates, bicarbonate of soda and coffee or tea in a pot and cook until the
dates are soft. Mash the dates.

2. Cake: Mix all the dry ingredients.In a large
bowl, whisk the oil, yoghurt, eggs and vanilla essence together until light.
Add the date mixture and mix well.

4. In a
separate bowl, mix the baby marrows with the almonds and choco-late pieces.

5. Fold the
baby marrow mixture and dry ingredients alternately into the egg mixture.

6. Transfer
to the prepared loaf tin and smooth the surface.

7. Bake for 50-55 minutes or until a skewer
inserted into the middle comes out mostly clean – be-cause it’s so moist, a
little of the mixture should stick to the skewer. Leave to cool in the tin, then
transfer to a serving plate.

8. Topping: Sift the cocoa powder over the cake. Mix the cottage cheese, yoghurt and sugar
and spoon over the cake. Garnish with berries or other fruit of your choice
