Ingredients (9)

4 chicken drumsticks and 4 chicken thighs
salt and freshly ground black pepper — to taste
200 g button mushrooms — halved
1 packet brown onion soup powder
250 ml water — hot
1 tbsp tomato paste
250 ml chutney
250 ml mayonnaise
125 ml fresh oregano — chopped

Method:

Preheat the oven to
180°C.

Season chicken pieces
with salt and pepper, place in an ovenproof dish and add button mushrooms.

In a small bowl, mix
onion soup with hot water, add tomato paste, chutney and mayonnaise.

Pour the mixture over
chicken pieces, cover with lid and bake in oven for 1 hour.

Remove lid and add fresh
oregano and cook for a further 15 minutes.

Serve over rice or samp
and beans.
