Ingredients (11)

250 ml castor sugar
250 ml brown sugar
3 eggs
350 g butter
375 ml hot-chocolate powder
5 ml vanilla — essence
250 ml castor sugar
115 g butter
60 ml milk
30 ml hot-chocolate powder
1 ml flour — self-raising

Method:

Preheat the oven to 180°C and grease a baking tray.

1. Beat the caster sugar and brown sugar with the eggs until light and pale. Add the butter and mix well. Add the flour, hot chocolate and vanilla essence and mix to a soft dough.

2. Roll the dough into small balls and place the balls on the baking tray. Flatten them slightly and bake for 8 to 10 minutes. Leave to cool.

3. FILLING 

Place the sugar, butter and milk in a saucepan. Mix the hot-chocolate powder with the boiling water and add it to the milk mixture. Mix well and boil rapidly for 5 minutes. Remove from the heat and beat until stiff and cold.

4. Spread the filling over cooled biscuits and sandwich together.
