Ingredients (12)

350 g carrots — peeled and chopped
1 kg butternut — peeled and cut into chunks
1 head of cauliflower — broken into florets
sea salt and freshly ground black pepper
30 g butter
60 ml flour
750 ml milk
250 ml gouda cheese — grated
5 ml salt
black pepper — freshly ground
500 g elbow macaroni pasta — cooked
250 ml mozzarella cheese

Method:

Preheat the oven to 180°C. Grease a

large casserole dish with nonstick spray.

1 MASH

Put all the ingredients in a large pot.

Pour in cold water – the veg shouldn’t be
covered – and cook over medium heat until all the veggies are soft.

Strain in a colander and leave to cool a
bit before mashing.

2 WHITE SAUCE

Heat the butter in a medium saucepan, add
the flour and stir.

Slowly add the milk, stirring continuously.

Add the cheese and stir until the sauce
begins to thicken.

Season with salt and pepper.

3 TO FINISH

Mix the mash, white sauce and cooked pasta
together.

Spoon into the prepared dish.

Sprinkle the cheese over and bake for
20-25 minutes.
