Monster cabbage and potato rösti

Ingredients (17)

3 potatoes — grated
1 onion — sliced
300 g cabbage — shredded
125 ml flour
1 eggs — whisked
salt and freshly ground black pepper
30 ml oil
15 ml butter
mustard yoghurt
15 ml wholegrain mustard
10 ml Dijon mustard
15 ml fresh dill — chopped
60 ml yoghurt — plain
lemon — grated zest
salt and freshly ground black pepper
to serve — to serve
4 smoked sausages — fried and sliced

Method:

1. Squeeze
the grated potatoes to remove excess moisture. In a large bowl mix the potatoes,
onion, cabbage, flour and egg. Season with salt and pepper.

2. Heat
the oil and butter in a large pan. Spread the potato mixture in the pan and
compact it with a wooden spoon. Fry over low heat for about 10 minutes or until
the rösti turns golden brown and becomes denser.

3. Use a
large egg lifter to carefully turn the rösti over. Fry until golden brown on
the other side (another 5-10 minutes). Carefully transfer to a serving plate.

4. Mustard yoghurt: Mix the mustards and dill into the yoghurt. Add the lemon zest (if using),
salt and pepper.

5. To
serve:
Slice the rösti and serve with the mustard yoghurt and fried sausage.
