Mozambican butternut and cashew curry

Ingredients (13)

10 ml fresh chillies — 573
1 onion — finely chopped
3 garlic — cloves, crushed
15 ml cumin — ground
2,5 ml cinnamon — ground
15 ml turmeric
3 cm fresh ginger — peeled and finely chopped
1 kg butternut — cubed
1 coconut milk — tinned
750 ml stock — vegetable
250 g cashew nuts — roasted
fresh coriander — handful
rice — cooked, to serve

Method:

1. Heat
the oil in a large pot over medium heat and fry the onion. Add the garlic,
spices and ginger and stir for a minute.

2. Add
the butternut, coconut milk and stock. Simmer uncovered for about 30 minutes,
stirring occasionally, until the butternut has softened.

3. Sprinkle
the cashew nuts and coriander over. Serve with rice.
