Ingredients (10)

300 g pasta — penne
1 red onion — chopped
1 red pepper — diced
1 smoked chicken breast — sliced
410 g sweetcorn — tinned, drained
100 g frozen broccoli florets — blanched
100 g peas — frozen, blanched
salt and freshly ground black pepper
250 ml
micro herbs

Method:

Cook penne in salted hot water according to instructions on packet until soft.

Drain and set aside to cool.

In a large mixing bowl, add onion, red pepper, chicken breast, corn, broccoli, peas, salt and pepper and toss lightly to mix.

Add the cooked penne, salad cream and fresh herbs and toss until well mixed. Refrigerate until needed.
