Smoked oysters, avocado, cucumber and mackerel on salad greens

- ½ packet mixed lettuce salad
- 1 avocado, peeled and sliced
- ½ English cucumber, deseeded and sliced
- 150 g peppered mackerel
- 150 g smoked oysters or mussels in oil, drained
- Italian dressing
- Melba toast to serve
On a large serving platter, arrange mixed lettuce and top with avocado, cucumber, flaked mackerel, oysters or mussels.
Drizzle with Italian dressing and serve with Melba toast.
We used the packet of herb salad with beetroot and carrot sticks.
You can use any of the mixed green salads.
