Sweet melon salad with biltong eggs
This quick-and-easy salad is a refreshingly different take on breakfast. We serve it with boiled eggs and biltong.
- 6-8 eggs
- 125 ml biltong powder
- 2,5 ml salt
- 5 ml freshly ground pepper
- 1 large or 2 smaller sweet melons, halved and seeds removed
- 100 g fresh rocket
- 1 round feta (optional)
1 EGGS Put the eggs in a saucepan and cover with cold water.
Bring to the boil, then continue boiling for 3 minutes for soft eggs, 4-5minutes for medium eggs or 6-7 minutes for hard-boiled eggs.
As soon as the eggs are cooked crack the shells and cover in cold water to cool.
2 Mix the biltong powder,salt and pepper well and sprinkle on a plate.
Shell the eggs, then roll each egg in the biltong,salt and pepper mixture.
Peel and slice the melon as preferred.Sprinkle the rocket over and toss lightly.
Arrange the salad on a plate,add the eggs and feta(if using) and serve
