Toasted cheese sandwiches
These classic toasted cheese sandwiches will make it to your plate in minutes.
- 410 g garlic-flavoured chopped tomatoes
- 50 g tomato paste
- 1 chilli, chopped (optional)
- 30 ml brown sugar
- salt and freshly ground pepper
- 8 thick slices of bread
- soft butter
- fresh basil
- mozzarella cheese, sliced or grated
1 In a small pot, simmer the tomatoes, tomato paste, chilli (if using) and sugar until thickened.
Season with salt and pepper.
Set aside to cool.
2 Butter the bread on both sides.
Spoon some of the sauce onto a slice of bread and top with basil and cheese. Cover with another
Repeat with all the bread.
3 Toast in a non-stick pan until browned and the cheese has melted.
Serve with soup or on its own.
