Apple, almond and celery salad
Fresh green salad, with an almond crunch.
Preparation time : 10 min Servings : 4
- 200 g baby spinach
- 2 green apples, cut into matchsticks
- 2 celery stalks, thinly sliced
- 200 g blue cheese
- 100 g flaked almonds, toasted
- 250 ml plain yoghurt
- salt and pepper - to taste
- 1 lemon - zest and juice
Toss together the spinach, apples, celery, cheese and almonds.
Mixt together the yoghurt, seasoning, lemon juice and zest then drizzle over the salad.
