Strawberry and Rooibos frosé ice lollies

Rooibos tea is a favourite in my household. So to make it bearable to enjoy this South African old faithful on a hot day, what better way than to add it to an ice lolly mix! This is certainly a lolly to make you jolly. Rosé can be omitted and replaced with juice of your choice.
Preparation time : 5 min
Cooking time : 10 min

Ingredients
Method
- 1 punnet of strawberries - sliced
- 1/3 cup freshly brewed rooibos tea
- 1 tsp vanilla extract or paste
- 250 ml Rosé wine
- 2 Tbs honey
In a small saucepan, add strawberries, honey, vanilla and rooibos tea (be sure to take the teabag out when adding to the pan). Simmer on a low heat to macerate until a jammy taste is achieved. Do this for about 10 minutes on a medium heat.
Set aside in a jug to cool. Add the rosé wine and stir to combine.
Pour into the ice lolly molds, making sure all are securely closed and leave in the freezer for 6 hours or better yet overnight.
